The Green Party

This certainly gets my vote!

Fibro Food Fairy

So, it’s Christmas party season and the morning after, the night before. Well, to be honest, it’s the third morning after the night before. Having attended and thoroughly enjoyed a Christmas party with my fibro family the recovery period after a little bit of dancing and a couple of glasses of wine is a long one. That said sometimes doing things that may challenge us physically and spending time, having fun with friends is the best tonic there is.

My Green Party smoothie cocktail is a perfect addition to your self-care, rescue pack. This recipe has it all, healthy fats (omega-3), protein, vitamins and is extremely nutritious. Don’t allow yourself to be put off by the bright green colour, remember that we should all be trying to be a little more green.

Taste good too!

My Green Party smoothie cocktail is a perfect addition to your self-care, rescue pack.

  • 250 ml dairy free coconut milk
  • ½ avocado
  • A large handful of fresh, washed spinach
  • A large handful of mint
  • 1 organic, free range egg (uncooked)
  • 4-5 walnuts, soaked for a couple of hours or overnight
  • ½ teaspoon vanilla extract
  • ½ teaspoon Stevia
  • Water or coconut water (optional)

Place all the ingredients, except the water in a liquidiser or smoothie maker. Blend until smooth. Add a little water or coconut water to achieve desired consistency.

FIBRO FOOD FAIRY TIP: I would recommend soaking the walnuts overnight which will make them soft and lovely and plump by the morning. Also, when I want to make a smoothie, I want it there and then and don’t want to have to wait for a few hours for the nuts to activate.
