Summer mango porridge

This is an easy to prepare, healthy, nutritious filling breakfast. It takes less than 5 minutes to make but is best prepared the night before so that the oats have time to soften and absorb the tropical mango and coconut flavours.

Fibro Food Fairy

Porridge oats are naturally gluten free however they may be processed in places that handle wheat, so if you have an allergy it is best to seek out the gluten free options. Porridge oats are high in fibre and have a low GI which means they are slow to break down and keep us fuller for longer; this helps to maintain our energy levels. There is also research to suggest that oats are good for heart health and help to lower cholesterol, so everyone’s a winner!

For any spoonies out there this is a delicious quick win. I use tinned mango purée and a battery-operated tin opener which makes it even easier to prepare. Just combine a few large spoonfuls of the purée with a gluten free porridge microwave sachet and a yoghurt pot so that you don’t have to you don’t have to measure anything if you are too tired or struggling to concentrate.

This breakfast is at its best if left overnight however can be eaten straightaway if you can’t wait that long. It can also be served as a desert. This is best served at room temperature topped with toasted coconut flakes and fresh strawberries, but this is optional.

Summery mango porridge

Ingredients

  • 40g gluten free porridge oats
  • 80g dairy free coconut yoghurt (I use KoKo)
  • 100g mango purée
  • 2 teaspoons desiccated coconut
  • A drizzle of maple syrup
  • Toasted coconut flakes and fresh strawberries (optional)

Instructions

Mix all the ingredients except the coconut flakes and fresh strawberries and leave overnight to soak in the fridge. In the morning top with toasted coconut flakes and fresh strawberries. Enjoy this lovely summery, easy to make breakfast that’s both filling and nutritious.
