Olive oil, cranberry & lemon cookies
These olive oil, cranberry and lemon cookies are incredibly simple to make and completely irresistible fresh from the oven.
- 125 mL extra virgin olive oil
- 125g coconut sugar
- 1 large egg
- Zest of one lemon
- 100g rice flour
- 100g ground almonds
- 2 teaspoons gluten free baking powder
- 90g dried cranberries, chopped
- 25g flaked almonds, chopped
Preheat oven to 180° C fan.
In a large bowl whisk the oil, egg and lemon zest just to combine.
In a separate bowl mix together the rice flour, ground almonds, gluten free baking powder, chopped cranberries, flaked almonds and ground almonds.
Add the wet ingredients to the dry ingredients and mix to combine.
Using wet hands roll into 18 balls. Transfer to a lined baking sheet; flatten slightly with the back of a fork. Bake in the oven for 12 minutes.
Once cooked and golden brown take out of the oven, leave on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
