This is a hassle free, low FODMAP side dish. I make large batches of this and freeze them in individual portions so that I have them ready to go when I need them. A minute to defrost in the microwave and another couple of minutes to reheat. I actually prefer mash cooked in this way as it is always piping hot.Fibro Food Fairy

Low FODMAP carrot and celeriac mash
Carrot and celeriac mash. A hassle free, low FODMAP side dish.
- 750g organic carrots, peeled and chopped or pre-prepared carrot batons
- 2 large celeriac, peeled and diced
- Olive oil (I prefer extra-virgin olive oil)
- Salt and pepper to taste
- Fresh rosemary and or parsley finely chopped
Bring a large saucepan of salted water to the boil. Add the carrots and celeriac and allow to simmer for approximately 15 minutes, until softened.
Drain and return to the saucepan. Mash with 1-2 tablespoons of olive oil. Season to taste. Serve immediately with fresh herbs. Alternatively, portion (180g) and freeze in containers ready for another day.
FIBRO FOOD FAIRY TIP: celeriac browns quickly once peeled. If you are not using straightaway place in a bowl of cold water with a little lemon juice to prevent it from spoiling. I also have a nifty little mashing attachment for my stick blender which makes this even simpler.
