This recipe is a tasty quick win for a midweek meal.
- 3 teaspoons ginger purée
- 3 teaspoons garlic purée
- 2 star anise
- 150mL medium dry sherry or Chinese rice wine (see Fibro Food Fairy tips)
- 2 tablespoons Coconut aminos or Tamari (see Fibro Food Fairy tips)
- 1 teaspoon sesame oil
- 2 teaspoons honey
- ½ teaspoon finely chopped red chilli (frozen preprepared or fresh) or red chilli flakes (optional)
- 4 chicken thighs &/or drumsticks
- Serve with preprepared brown Basmati egg fried rice and steamed vegetables. Garnish with sliced salad onions and toasted cashew nuts (optional)
In a large bowl whisk together the ginger, garlic, star anise, sherry or rice wine, Coconut aminos or Tamari sauce, sesame oil, honey and chilli, if using. Place the chicken portions in an ovenproof sauté pan or a large frying pan. Pour the marinade over the chicken and bring to the boil.
Transfer to a preheated oven and cook for 35-40 minutes, at 180° C fan, basting and turning the chicken halfway through.
Once the chicken is cooked remove from the oven and serve with preprepared, microwave steamed rice and vegetables. Garnish with sliced salad onions and toasted cashew nuts.
FIBRO FOOD FAIRY TIP: whilst Chinese rice wine is more traditional, I have used a medium dry sherry for this recipe as I have been unable to find a rice wine that is free from gluten and refined sugars. FIBRO FOOD FAIRY TIP: I use coconut aminos, available online and in health food shops as it is both gluten free and soya free. Tamari, is a gluten free soy sauce and a suitable alternative to coconut aminos. It is available in most supermarkets, however it does contain soya. FIBRO FOOD FAIRY TIP: if you haven’t got an ovenproof frying pan use a normal frying pan before transferring to an ovenproof dish. FIBRO FOOD FAIRY TIP: preprepared rice and vegetables take approximately 3-5 minutes to steam in the microwave. This can be done whilst the chicken is cooking. If you want to keep the meal egg and nut free, omit the cashew nuts and serve with plain rice. FIBRO FOOD FAIRY TIP: for a really sticky sauce, once the chicken has cooked, transfer the marinade to a saucepan bring to the boil and reduce before pouring over the top of your meal.
